The Cornish or Indian Game is a breed of chicken from the county of Cornwall in England. Cornish chickens are a cross between the Cornish and White Plymouth Rock chicken breeds. This bird is poached then roasted and served au jus with a seasonal salad.

Originally from France, Sasso chicken are raised in Lancaster and Montour counties, PA. Raised for eight weeks, they are an active breed that has access to the outdoors to forage naturally. Their diet is strictly all vegetarian which gives the meat a distinct flavor and juiciness. Poached then roasted to perfection, served au jus with seasonal salad.
